Do you offer equipment for consumers?
No, we only offer solutions for professional food manufacturers.
What is the minimum capacity for your solutions?
We offer food processing equipment solutions starting at a capacity of 200 kg/hour.
Can I test my products in your machinery?
Yes, you can test your product in our Food Tech Centers. If you can’t come to us, we also offer product demonstrations via live video. These remote sessions provide a valuable and convenient product demonstration and customer experience. We can also provide on-site demonstrations in your facility. All of our tests are conducted in a factory environment similar to yours. Request a trial.

DSI 812 and Waterjet Technology
What types of food can I process with your DSI 812 Portioner?
Almost any food! The DSI 812 Waterjet Portioner is suitable for the full range of poultry, meat, plant-based and seafood proteins as well as cakes and vegetables products.
What kind of applications can I run in your equipment?
Almost any kind! There are no limits with the JBT DSI 812 Waterjet Portioner. Our machinery is flexible to facilitate with quick turnarounds and scalability in your production line. You can easily change the processed application when needed. Here are some examples of common cutting strategies and applications that our existing customers are creating:
- Poultry parts, fillets, steaks, medallions, strips, nuggets and even complicated shapes
- Trimmed red meat steaks and loins
- Pork bellies and trimmed ribs
- Plant-based Protein portions as fillets, strips, nuggets and more
- Fish steaks, sticks, nuggets and more
How much more yield can I get with the DSI 812 than with a blade cutter?
It depends on your process and the accuracy you will work out for the cutting programs. Different cuts also have a different potential for yield increase. Looking at a defined strip in weight and dimension, the strip-yield increase could go up to 25% with the DSI 812 compared to a blade cutter. In other processes, an overall increase of up to 10% more yield can justify the entire investment for this equipment.
What is the minimum capacity for DSI 812?
Optimally, we suggest a capacity between 400kg and 1400kg/h, but the capacity range also depends on the process you are looking for. A particular seasonal product might be run at 250kg/h to get 2.5 tons done on one business day, while the major capacity over the year is around 800-1200kg/h. But of course, there is no minimum capacity for the DSI 812 – if you want to run 1 kg/h, it’s possible.
Is a waterjet more water-consuming than a blade cutter?
No, in most cases, the blade cutter uses more water for cooling and keeping the blade clean than the waterjet uses for cutting.
Can I still label my poultry product as fresh when using a waterjet cutter?
Yes, of course – maybe even fresher! Waterjet cutting is USDA-approved technology and is even seen as providing higher shelf life than regular cutting technology. Furthermore, the water used with waterjet technology is sterile and creates a greater hygienic cutting environment.
Does any water get into the poultry when using a waterjet cutter?
No, we have done thorough investigations and are assured this doesn’t occur. We will be more than happy to send you the physical data which underlines this.
In what way is the DSI 812 intelligent?
It’s intelligent because it’s able to create a unique and optimal cutting pattern for every single piece of raw product due to onboard scanner which scans every product while entering the machine. Computer controlled consistency improves product quality by driving down human error. This provides you with complete control of the output by hitting your weight and dimension targets every time.
How many patterns can the DSI 812 cut in?
As many as you can imagine. It comes with 50 menus preinstalled containing several subroutines that will help you optimize the settings according to your needs.
How do I fit the DSI 812 into my line?
It’s pretty straightforward. You replace your blade cutter with the DSI 812 and integrate it. Then you have a uniquely flexible solution that lets you change the cutting pattern with a click.
What’s the Jet-Block technology, and how can it benefit me?
The Jet-Block Technology allows you to cut your creative shape fast and in one go. This JBT-patented innovation makes it possible to stop cutting for a split second and start immediately again. Together with shared cutters on one piece, it makes the DSI 812 the waterjet with the highest capacity and accuracy in the poultry area. In addition, it also makes it possible to do unique cuts as it can move over the product without cutting while maintaining the high cutter speed.
Does the DSI 812 need more maintenance than a blade cutter?
No, on the contrary. Because unlike the blade cutter, the waterjet cutter uses water as a blade, which means it never has to be sharpened nor replaced, resulting in less downtime.
